Slow Cooker Minced Beef

The following recipe is by no means a traditional bolognese. I would call it a mince curry but that is also not quite right. It is somewhere in the middle. It is a very simple dish that literally has 3 or 4 major ingredients excluding the spices and herbs.

It is for people who don't have time, like my 1 year old baby having self. The recipe also has a low caloric count because that is where I am currently in my life. If you're not trying to watch your diet, just serve this with more trimmings. However, if you're trying to watch your calorie intake, serve it with 2 cups of broccoli and 50g of whole grain brown rice.

Slow Cooker Minced Beef. (Serves 5.)





What you will need:

A slow cooker. A normal pan.

Ingredients:

500g Minced Beef
1 bottle (approx.400g) Arrabiata pasta sauce
4 tablespoons olive oil
1 medium size red onion
1 cube of beef bouillon crushed

Spices and herbs

1 heaped tbsp Ginger/Garlic paste
1 Garlic clove minced
1.5 tbsp Garam Masala
1.5 tbsp Medium to Hot Madras/Curry powder
1 tbsp Paprika
1 tsp heaped Turmeric
0.5 tbsp dried Rosemary
0.5 tbsp dried Basil
0.5 tbsp Oregano
1 tsp whole cumin
15 Curry leaves
40ml water.
Salt and pepper to taste

Sauté onions, garlic, ginger/garlic in a pan in olive oil until they brown a little and become soft and translucent. Add all spices to the onion mix and stir for a minute. Add Minced Beef and stir in until all the beef is brown. At first, the beef might get stuck at the bottom of the pan, but just keep stirring until it loosens itself. When minced beef mixture starts sizzling and frying after it is all brown, you should see the oil separating from the mince a little at the bottom of the pan to know it is cooked to the right level. While the minced beef is not releasing the oil and it is still a paste, it needs to be cooked and stirred more. Be patient. The process is about 10 minutes. Now, add Arrabiata sauce and beef bouillon ad mix well. Add water and let it simmer for another minute and transfer to the slow cooker.

Cook for 6 to 8 hours and not less on medium heat. If you don't have a slow cooker, cook on very low heat for 2 hours. Then, if you wish, open the lid of the slow cooker for 30 minutes before serving to evaporate the water a bit. This last step would be unnecessary on the stove as the moisture would escape without anything you can do, however, on a slow cooker, the moisture is all retained. Serve with your side of choice.

Note: If you do not want to use Arrabiata sauce, tomatoes and some red bell peppers will do too. 300g of tomatoes and 100g of red bell peppers, chilli flakes or 1 chilli and some fresh basil leaves. However, a pasta sauce is already cooked, so using uncooked tomatoes and red bell peppers will add about 40 minutes to get the right texture and flavour.
