Coconut Ice.

Dear Reader,

I wanted to make some treats to send off to friends, and because I had a kilogram of desiccated coconut lying around, I thought coconut ice would be perfect for the job. It is very easy.


500g Sweetened Condensed Milk.
500g Icing Sugar
400g Desiccated Coconut.

Food colouring (Any colour you like)


Make two batches by dividing the ingredients in two, e.g. 500g divided by two and so on. Mix the Icing sugar and Condensed milk first, and then add coconut last. One batch will have food colouring and the other will not. On the batch with food colouring, add colour to condensed milk, then add sugar and also add coconut last.

In a square or rectangular container, pack the white mixture on evenly. Then pack the coloured mixture on top evenly. Leave out to in the open to dry for at least 5 hours, but preferably overnight.

Cut into squares and put in small jars or leave out to dry further after cutting. It keeps for at least two weeks.
