Fresh Summer Chickpea Salad

Dear Reader,

During summer time, you really aren't in the mood to slave at the kitchen so an easy yet tasty salad with loads of protein is great. I use chickpeas, but you can use lentils of your choice and not split peas as they tend to break easily. A lentil with skin is recommended.

Fresh Summer Chickpea Salad (Serves three)


300g Chickpeas
1 cup tomato (finely diced)
1 cup cucumber (finely diced)
1 tsp onion (finely diced)
1 tsp of chives (finely diced)
0.25 cup red bell pepper (finely diced)
1 red chilli (finely diced, seeds removed)
3 tsp lemon juice
3 tsp olive oil
1 sprig fresh basil
A pinch of Oregano
salt and pepper to taste


Mix it all together and serve.

I'm about to have mine with a fillet of fish. Yummy!
