Easiest Pasta! Chicken, Bacon and Sun-dried Tomatoes.

Dear Reader,

I decided to make this insanely easy recipe because I am a fan of cooking quick dishes that pack a lot of flavour, but also, I like to cook dishes that I can ask my husband to make. The easier the better because I do not want to intimidate someone with cooking. So, I generally like to share simple meals rather than tedious, complicated ones.

This recipe is great for those who prefer gluten free cooking like me because the sauce for the pasta had no flour to thicken it. It has no Bechamen Sauce.

Chicken, Bacon and Sun-dried Tomato Pasta.





Ingredients:

Pasta of your choice.

1 Onion
0.75 Cup of Bacon diced or chopped in small pieces
1 Cup Sun dried Tomatoes
500ml Créme Frâiche
300g Chicken Breast
1 or 2 Cloves of Garlic
Salt and Pepper to taste.

Directions

In a non stick pan, fry the bacon and release its natural oils. As soon as some oil is released from the bacon, add the onions and garlic and sauté until the onions are wilted. Then add the chicken and the sun dried tomatoes to the pan and cook the chicken, season with salt and pepper and stir constantly until it is cooked. The flavours should be nicely amalgamated by the time the chicken is cooked. Then, add the créme frâiche to the mixture and mix. Let the mixture cook and simmer on the lowest heat or switch the stove off but keep it warm because you have to prepare some pasta.

Boil pasta by letting water boil on a high heat. Add oil and salt into the water when the water boils and add pasta. Cook for a maximum of 15 minutes to make sure that the pasta is nice an al dente, but because I don't know how your stove performs, you can give or take that time.

Drain the pasta, but not too long, so that some of the pasta's water is still on the pasta, and add to the chicken mixture. Stir and serve. You can add chives as garnish but it is really not necessary. Try to not add too many spices because these flavours are good enough on their own. Trust me.
