If you're trying to eat clean, then store bought spice mixes might be problematic because they contain many allergens and preservatives that aren't good for health generally. If you're looking for maximum flavour, then making your own spice mix, and keeping it in your spice cupboard for 3 months, would benefit you also. The trick about a spice mix is balance, but please feel free to tweak it as you wish to your own taste.
This spice mix is great on roast chicken. Mix it wish oil and whole, dried rosemary and rub it generously all over a chicken. Leave it to sit in a very cool fridge for at least 24 hours in a zip lock bag or in vacuum pack and roast it at 200° C for 10 minutes and at 180° C 35 minutes. Take out the oven, let it rest for 10 minutes and serve.
