Coconut Ice.

Dear Reader,

I wanted to make some treats to send off to friends, and because I had a kilogram of desiccated coconut lying around, I thought coconut ice would be perfect for the job. It is very easy.



Ingredients:

500g Sweetened Condensed Milk.
500g Icing Sugar
400g Desiccated Coconut.

Food colouring (Any colour you like)

Directions:

Make two batches by dividing the ingredients in two, e.g. 500g divided by two and so on. Mix the Icing sugar and Condensed milk first, and then add coconut last. One batch will have food colouring and the other will not. On the batch with food colouring, add colour to condensed milk, then add sugar and also add coconut last.

In a square or rectangular container, pack the white mixture on evenly. Then pack the coloured mixture on top evenly. Leave out to in the open to dry for at least 5 hours, but preferably overnight.

Cut into squares and put in small jars or leave out to dry further after cutting. It keeps for at least two weeks.

Chocolate Cupcakes with Chocolate Cream Cheese Frosting.

Dear Reader,

It is birthday season and it is time to bake cakes. What am I saying? I didn't mean to lie so blatantly.  I bake all year, but now I actually have an excuse to bake because cakes are needed. After watching Cupcake Jemma's YouTube videos, I got hooked and developed cupcake fever. Although this recipe is not from her, her channel really helped me understand a lot.

Here is my recipe. It is moist, decadent, and impressive. The great thing about this recipe is that, it is very easy.

Potatoes with Sautéed Peppers and Shallots.

Dear Reader,

I was going through life, minding my own business when a potato craving caught me, and had me thinking of potatoes for a good three hours before I submitted and made something. Potato chips or fries were not an option, they didn't have enough flavour so I made something that can be paired with a protein of your choice, for example, grilled chicken, fish or even a steak. It's very easy to make if you have the correct potatoes, i.e. potatoes that cook quickly. It took me 15 minutes to make this. Yum.

Baby Carrots Get A Sexy Make-over.

Dear Reader,

Carrots are perfect as they are with just a bit of butter, and seasoning. However, once in a while you may want to switch things up and serve them differently to impress guests at a dinner party, or like me, for no reason at all other than to give them a new dimension.

My husband loves these, and they make a perfect side for a chicken roast.

Fresh Summer Chickpea Salad

Dear Reader,

During summer time, you really aren't in the mood to slave at the kitchen so an easy yet tasty salad with loads of protein is great. I use chickpeas, but you can use lentils of your choice and not split peas as they tend to break easily. A lentil with skin is recommended.

Spice Mix For Chicken!

Dear Reader,

If you're trying to eat clean, then store bought spice mixes might be problematic because they contain many allergens and preservatives that aren't good for health generally. If you're looking for maximum flavour, then making your own spice mix, and keeping it in your spice cupboard for 3 months, would benefit you also. The trick about a spice mix is balance, but please feel free to tweak it as you wish to your own taste.

This spice mix is great on roast chicken. Mix it wish oil and whole, dried rosemary and rub it generously all over a chicken. Leave it to sit in a very cool fridge for at least 24 hours in a zip lock bag or in vacuum pack and roast it at 200° C for 10 minutes and at 180° C 35 minutes. Take out the oven, let it rest for 10 minutes and serve.

Easy Stir Fry

Dear Reader,

If you're looking for a low carb dish, and you are pressed for time, then try this recipe. I like cabbage a lot. I know that it's not everyone's favourite but put some chicken and soy sauce in it and cabbage gets a very sexy asian upgrade.

Dear Reader,

I decided to make this insanely easy recipe because I am a fan of cooking quick dishes that pack a lot of flavour, but also, I like to cook dishes that I can ask my husband to make. The easier the better because I do not want to intimidate someone with cooking. So, I generally like to share simple meals rather than tedious, complicated ones.

This recipe is great for those who prefer gluten free cooking like me because the sauce for the pasta had no flour to thicken it. It has no Bechamen Sauce.
