Healthy Chicken Burrito Filling!

Dear Reader,

I generally do not like meat, but on numerous occasion, I will crave ground meat. It's the weirdest thing. I love sausages, and minced meat, and if allowed to, I could eat it for breakfast, lunch and supper. But, alas, since I am on a weigh-loss journey with these recipes, I have to say that keeping within the Metabolic Balance rules, i.e. 1 type of protein per meal, I have had to introduce spices to add depth of flavour that can sometimes be found by mixing proteins.

It will be up to you whether you add cheese on your burrito, whether you you eat it with gauc, and add things like plain yoghurt which some people do. Also, this recipe is designed to fill you up without missing the required amount of veggies and protein in your meal. Also, it is up to you whether you eat this with a tortilla, or like a good healthy person, whether your tortilla is lettuce or just with 10g of rye bread.

So here goes...

Healthy Chicken Burrito Filling! (Serves 2 people)

300g Chicken Minced Meat
150g of Frozen Mixed Veggies (of your choice)
40g Ghee (Clarified Butter)
2 Cloves Garlic (Finely crushed)
25g Green Onions (Finely Chopped)
35g Red Bell Pepper (Finely Chopped)
90g Tomato (PureƩ)
1 tsp Whole Cumin Seeds
0.5 tsp Turmeric
1 tsp Curry Powder (Hot Madras)
0.5 Tsp Garam Masala
A pinch of powdered Ginger
A pinch of Paprika
Salt and Pepper (to taste)


In a hot pan, heat up Ghee and add cumin seeds. As the seeds start to sizzle, add onions and garlic and stir. Do not let the onions burn. A minute after, add chicken and with a fork or whisk, stir it into the onions making sure that the meat is not it big clumps. Add spices to the chicken mixture. Stir until the chicken is nice and golden in colour from the spices. Add tomatoes and stir. Add red bell peppers and your vegetable mix and stir. Cook for at least 15 minutes, stirring and occasionally replacing the lid to let the juices simmer. When the meat has soaked in the tomatoes, and when the watery nature is no more, but still nice and moist, serve your filling as you wish.

P.S. I want to eat NOW coz it smells so good, but I have to eat later because I ate lunch later. According to Metabolic Balance, one must have at least 5 hours between meals. *cries*
