Salmon and Mushroom Pasta!

Dear Reader,

Yesterday was the best day of my life! My nutritionist allowed me 2 cheat meals twice a month, and on top of everything else, yesterday was the greatest Game of Thrones episode this season, or ever, so, my husband and I decided to make yesterday a pleasure extravaganza.

We came back from Zürich, he from work, I from my nutritionist, and we had a mission in mind. So, as soon as we got home, we downloaded Game of Thrones (downloading is allowed in Switzerland). As that was downloading, he went to gym and I cooked. As soon as the food was cooked, I showered, put on my favourite scent, Dolce by Dolce and Gabbana, put on my pjs, and by the time I finished everything, he was also showered and ready to eat the best meal of our lives, and watch our favourite show.

The pasta took me 30 minutes to make. Here is how...

Salmon and Mushroom Pasta (Serves 2)


300g Salmon (bite size diced)
20g Green Onions
270g Cremini Mushrooms
2 cloves Garlic
300g Creme Fraîche
1 tsp Thyme Dry
30 ml Ghee
0.5 tsp Garam Masala
Salt and Pepper

And pasta of your choice. I used Dinkel Pasta and avoided wheat like the plague because, just because I am having a cheat meal does not mean I must ruin my life and health.



Boil 2L water. Add salt and oil to water. Add pasta. Boil until cooked but still al dente.

Salmon and Mushroom Sauce:

Add ghee to a pan and sauté the green onions and garlic on a medium to high heat. After a minute or two, add mushrooms. The mushrooms will absorb all the oil and leave the pan dry. To help the process of cooking, add 3 to 4 tablespoons of water to the mushrooms, and they should start simmering and releasing the oil that they have absorbed. Add herbs and spices to the mix and stir it in evenly. Then add the salmon cubes and replace lid to the pan and let the salmon cook itself without moving it too much. This makes sure that the salmon does not break and become tiny pieces, so do stir carefully so as not to break the salmon pieces.

Stir a few times, making sure that the salmon is covered by the mushrooms and flavours, until salmon is nice and light pink. Do not over cook. After about 4 minutes, add Creme Fraîche to the mixture, and stir it in.  Season the mixture please, with salt and pepper!

Add the mixture to your pasta and serve, and get ready for a mouth orgasm! It was so delicious that my husband had 3 portions.
