Easy Durban Style Chicken Curry!

Dearest Reader,

Indian curry is my absolute favourite thing to eat. I can eat curry everyday and not get tired of it, which makes me think that I was an Indian in my previous life. What helped is growing up in Durban and Port Shepstone, in South Africa, where I was surrounded by Indian people and friends who shared the foods with me, which helped me be able to make authentic South African Indian Curry. I specify the area because curries differ, but personally, the style that I make, is superior. Ask anyone from Durban. LOL.

Here's how to make it, and the more of the ingredients I list you have, the better it tastes. You don't need to put all the spices I put in mine, but every spice you do not put does in fact make a huge difference in taste. I will also tell you what to substitute to make it less healthy and of course, more delicious. Ha!

Salmon and Mushroom Pasta!

Dear Reader,

Yesterday was the best day of my life! My nutritionist allowed me 2 cheat meals twice a month, and on top of everything else, yesterday was the greatest Game of Thrones episode this season, or ever, so, my husband and I decided to make yesterday a pleasure extravaganza.

We came back from Zürich, he from work, I from my nutritionist, and we had a mission in mind. So, as soon as we got home, we downloaded Game of Thrones (downloading is allowed in Switzerland). As that was downloading, he went to gym and I cooked. As soon as the food was cooked, I showered, put on my favourite scent, Dolce by Dolce and Gabbana, put on my pjs, and by the time I finished everything, he was also showered and ready to eat the best meal of our lives, and watch our favourite show.

The pasta took me 30 minutes to make. Here is how...

I am personally tired of meat altogether, but because I am on the Metabolic Balance diet, I just have to grit my teeth through it. Chicken is the most palatable meat for me, so I am always looking for different ways to make it exciting. So, I made this chicken dish last Sunday. It was very quick and easy to make, which is very important because we have lives to live, right? Here is how I made it...

Chickpea and Mozzarella Pesto Salad

Dear Reader,

On Saturday, Switzerland played soccer against some other team and won, which is apparently an anomaly. My husband's friends invited us to watch the match, and asked us to bring salads. I invented this salad quickly, and it turned out to be quite a hit. It is not metabolic balance because it has two proteins in it, but you can remove either the mozzarella or the chickpeas to make it a healthy salad. I didn't because I do not like to impose my lifestyle on people, so I made a delicious salad for them and brought smiles on their faces. I made this salad for about 20 people, but below will be ingredients for two people.

Chicken Wings in Sticky, Red Bell Pepper Sauce

Dear Reader,

When I mentioned to my husband that I was going to make chicken wings, he was so happy, he hugged me. He loves chicken wings, and so do I, but I was stuck on the sticky, sweet sauce because I was not going to add any store bought sauce. Fortunately, inspiration smiled at me and I found a wonderful solution to making the sauce sweet, sticky and beautifully brown. Prunes!

Now, now... Give the recipe a chance before you judge. You won't taste them, for starters. You will just taste their effect, which is a deep, sweetness reminiscent of molasses, giving the sauce depth and deliciousness.

Breakfast or Lunch Idea: Chicken and Avo!

Dear Reader,

D' you have left over chicken from last night that you want to make an experience eating the next day? Well, here is how.

Get your leftover chicken, get some avocados, and some crunchy knäckerbrot and put it together. If you want to add some acidity, drizzle a little Apple Cider Vinegar. And, BOOM! You have a breakfast or lunch of champions.

I used:

70g chicken
90g Avocado
2 Crunchy Breads.

Paprika Butter Chicken Spice Mix!

Dearest Reader,

Since I can't eat ready made spices due to my eating plan with Metabolic Balance, I have to concoct my own spice mixes for chicken, lamb, and seafood. It sounds daunting, but it is as easy as going to the supermarket and getting a few ingredients. Then, you can keep the dry spices for a while in the cupboard by making a huge batch.

This particular recipe is not a big one. It is for about 4 to six chicken breasts but you can multiply the amounts for a larger amount. What makes this recipe "Butter Chicken" is that it gets a buttery and creamy flavour from the ghee that is included in it. You can then later serve this chicken with vegetables of your choice for a balanced meal.
