Chicken and Couscous Salad

Dear Reader,

Here is another easy salad to get you through the day, whether you have it for lunch or supper.  How you prepare your chicken is up to you, therefore you can steam, fry, roast or grill the chicken. I grilled mine today. This is what you need:

Chicken and Couscous Salad (Serves 2)


150g chicken x 2
70g couscous
70g Red Kidney Beans (cooked)
70g Zucchini (sliced thickly)
30g  Red Bell Peppers (sliced)
30g Cucumber (sliced)
30g Tomatoes pieces
0.5 tsp chopped basil
0.5 tsp sesame seeds
Parsley to garnish
Salt and pepper to taste

Lemon, vinegar or dressing to dress salad.


Grill chicken at 180° C in oil, sesame seeds, and spices of your choice for 25 minutes, turning the chicken once or twice.

Soak dry couscous in equal parts boiling water (70ml) with salt and a little oil. Do not soak couscous on the heat. Soak in a bowl.

When chicken and couscous are ready, slice chicken and fluff the couscous with a fork. Then mix all ingredients together.

That's it! Your salad is done.
