Chickpea, Kidney Bean and Red Bell Peppers in Tomato Sauce

Dear Reader,

There are many exciting ways of making flavoursome legumes. This recipe can be made with just one kind of legume, but personally, I love mixing other legumes with kidney beans because it allows for different textures in the dish, about making it look colourful. Of course, most importantly, red kidney beans have an awesome, deep flavour which helps add another dimension to other legumes.

You can serve this dish with rice, couscous and bread. You can also just enjoy it on its own. It is up to you. It doesn't go really well with pasta though.

Cauliflower and Yellow Lentils

Dear Reader,

Here is another delicious way to incorporate more lentils into your diet. I eat lentils at least twice a week because they are a beautiful vegetarian source of protein, and because they are so delicious. More than that, they are easy to make and you just need one pot to make them. No sautéing needed here! Just throw everything into the pot and watch it become a decadent and comforting supper. You can serve this with bread, rice, roti, and even couscous (not pasta). Here is what you need:

Carrot, Sesame and Ginger Soup

Dear Reader,

This is such an easy recipe that it didn't need a video tutorial. As easy as it is, it tastes very complex, multidimensional, which is great for entertaining. The recipe below serves two and you can make a larger batch by multiplying the ingredients. It keeps for 2 days refrigerated and for a month or two frozen. Here's what you will need:

Chicken and Mushroom Stuffed Red Bell Peppers

Dear Reader,

Stuffed peppers are only delicious to me when I use red bell peppers because I love the sweetness of red and ripe peppers. This recipe is very easy, and it is delicious. You can serve it with rice, potatoes, couscous and bread. You will be able to make this recipe in less than 30 minutes. Best of all, if you want to serve many people, this dish is very low on admin.

Delicious and Easy Mini Crustless Quiches!

Dear Reader,

For this quiche recipe, I did two types, for the healthy and the "I eat anything as long as it is delicious" people.  :) One thing remains though, even the "unhealthy" version is relatively healthy because I opted out of using a pastry crust. This is to be served on a bed of salad leaves as a lunch or light supper. It is made in 30 minutes from start to finish, and so you can make this before work, or after work, during your work lunch, or any time you please. There is no preparation needed except having all your ingredients available.
