Quick and Easy Shrimp Stir Fry Recipe

Dear Reader,

This recipe is very easy, so it is for people like me, people with time restraints, or in my case, a person who is not in the mood to cook today, but has to because fast food, cereal or anything with hidden sugars and preservatives, is not an option.

Quick and Easy Shrimp Stir Fry (Serves 1)





Ingredients:

150g of Shrimp (I use Jumbo Shrimp) defrosted
50g Red Bell Pepper
50g Green Beans
50g Carrots (Julienned)
1 stalk of Green Onions
20g of Ghee (clarified butter) *you can use any oil you want, to be honest.
2 cloves of Garlic crushed (or 2 tsp garlic powder)
0.5 tsp of Ginger
0.5 tsp Paprika
0.5 tsp Coriander Seeds crushed
0.5 tsp Chilli Flakes (optional)
0.5 tsp Curry Powder (optional)
Salt and Pepper to taste

Directions:

In a medium pan, add ghee and garlic and let it sizzle. (Do not burn garlic. If you burn garlic, you have to start all over because burnt garlic is awful.) Add shrimp, salt and pepper, and paprika until shrimp is cooked and pink. As soon as the shrimp gets pink all over, remove from heat and place aside in a bowl. Increase heat to medium high and in the same pan, add green onions, red bell peppers, green beens, carrots and stir fry. (You do not need a wok). Add spices and cook veggies until al dente and cooked. Return shrimp to the pan and toss everything together and serve.

Note: If this dish feels dry for you and you need a sauce with this meal, then you can add a ready made sauce. Just remember that with the sauce, it is no longer the healthiest meal. Alternatively, you can make more work for yourself and make this easy sauce below:

Easy Sauce:

Ingredients:

10g Honey
10g Soy Sauce
10g Balsamic Vinegar
30g Water
1 tsp cornstarch (add more if needed for desired thickness)

Mix in a cup. Add to stir fry. Let it thicken and glisten. Serve.
