Easy Delicious Protein Packed Lunch: Frittata

Dear Reader,

For an easy, yet special lunch, make yourself a protein packed frittata and make it special with the type of veggies you put in it. Then, serve it with a salad and you're good to go. Use two eggs per serving and use 140g of vegetables per serving. You can do the Math on how much you need according to your needs, but here is a recipe for 3 to 4 people.

Asparagus and Red Bell Pepper Frittata (2 eggs per person)

6 eggs (or 8 eggs for 4 people)
160g Asparagus, Red Bell Pepper.
1 tbs of shallot
10g of coconut oil
0.5 tsp green onions
0.5 tsp coriander
Salt and Pepper to taste
Chilli flakes to taste (optional)

Preheat oven to 180 degrees Celsius.

In medium hot, non stick pan, add coconut oil and vegetables and sauté until soft, but al dente. Add eggs to cooked veggies and leave on the pan until eggs are cooked at the edges of the pan. The middle should still be wet. Take pan into the oven and wait for 3 minutes until the entire egg is set.

Serve with a portion of salad and enjoy.
