Easy and Creamy Sweet Corn Soup Recipe (With Video)

Dear Reader,

Although I can not yet have this soup due to my diet, it is usually my go-to soup for dinner parties in winter because it is so easy. To make this sweet and delicious soup, you don't need many ingredients. This recipe serves 2 to 3 but you can always keep some for later by freezing it. What you need is the following:

Easy Creamy Corn Soup

300g Sweet Corn (Fresh or Tin)
500ml Milk
1 shallot (roughly chopped)
15g olive oil (or oil of your choice)
0.5 tsp Garlic powder or 0.5 Garlic Clove
Salt and Pepper to taste.

On a medium heat, sauté the roughly chopped shallot. Add garlic powder and stir. When semi-soft, add corn salt and pepper, and mix together. Replace lid and let simmer for 3 to 4 minutes. Add half the milk to mixture. Blend the contents of the pan until all corn is blended. Return to heat and add the rest of the milk. Let the soup heat up again and serve.

Note: I prefer to strain half the soup and leave the other soup chunky, but if you don't mind chewing a lot, you don't have to strain half the soup. Alternatively, you can strain the entire soup and have a Cream of Corn Soup.

Optional, if it is not creamy enough for you, you can add cream, but it is not necessary.

Serve with a good bread, and you will have yourself a hearty and easy soup for dinner.
