Crumbed Salmon on a Bed of Zucchini Recipe

Dear Reader,

For dinner today, I needed something quick and easy because I have washing to do, not to mention how my back is killing me slowly. I do not have time to stand by the stove today. So, this is a perfect recipe for that.

Crumbed Salmon on Bed of Zucchini (Serves 2)



4 Knäckerbrot rye (or any rye breadcrumbs)
2 tbs of parsley (4-8 branches or so)
20g Coconut oil
Salt and Pepper to season


2 (140g) steaks of Salmon
A pinch of crushed Coriander seeds
A pinch of crushed Cumin seeds
A pinch of Garam Masala
Salt and Pepper

Bed of Zucchini:
280g of Zucchini


Crush spices in a pestle and mortar, and rub fish in spices and seasoning. Leave in the fridge for at least an hour in a ziplock bag to marinate.

An hour later or whenever you're 30 minutes before dinner, preheat oven to 180 degrees Celsius. Blitz crumb ingredients together and place on marinated fish steaks using a spatula or your fingers if you wish. Bake in the oven for 15 to 20 minutes or a bit longer if it is not cooked in 15 minutes.

Steam two portions of Zucchini to serve with the salmon.
