Bean Curry For A Cold Day!

Dearest Reader,

I love curry! I am obsessed with curry, in fact. Therefore, to celebrate the reintroduction of oil into my diet after a 14 day, no oil, Phase 2 of Metabolic Balance, I thought I should treat myself. I served the curried beans (85g) with wonderful zucchini (120g)  and for dessert I had some mango (180g). The bread (10g) is optional on my plan, but to be quite honest, one doesn't need bread.





Easy Bean Curry Recipe

Ingredients:
1 tbsp finely chopped Onion
85g cooked Kidney Beans
80ml water (from the boiled beans)
1 tsp of chopped Coriander
1 tsp of Green Onions
20g Coconut oil
0.5 tsp Garam Masala
0.5 tsp Curry Powder
0.5 clove of Garlic
Salt to taste

Directions:

Heat coconut oil on a medium heat. Sauté onions and garlic until soft. Add spices and herbs and stir until oil is absorbed. Add beans and juices from boiled beans to the mixture. Stir and leave on low heat for 5 minutes. Serves 1 person.

  1. Beans are good in providing proteins and carbohydrates. It is a good option for those who do not like meat but want to gain weight.
