Butternut and Red Bell Pepper Soup.

Dear Reader,

I'm not supposed to eat butternut because it is full of starch and sugar, but you know what? It is winter and there is nothing like butternut to give you that warm, cosy, comfort food feeling. So, I cheated, but not like a crazy person. I ate it with a side of ham, and didn't eat bread with it, so I hope that balanced things out. Otherwise, we'll call it a cheat meal. :)

Chicken and Chorizo Wraps

Dear Reader,

This is an easy recipe, which might take about an hour, which is longer than my usual recipes because I like to cater for busy people. What is time consuming about this recipe is just wrapping the filling in rice paper. Otherwise, you can ditch the rice paper and wrap in in tortillas, but that adds more calories. It is up to you.

Dinner Ideas

Dear Reader,

There is no recipe needed for this. I am just giving you a dinner idea if you are stuck. All you need is cauliflower, carrots and some lamb. Pan fry the lamb, boil or steam cauliflower and carrots (separately), and then, blend cauliflower into a mash. Season everything with salt and pepper and you are ready to go. You can go wild, but this is the template.

This was my dinner this evening. I patted some crushed pepper corns and a little coriander seeds with salt to the lamb before frying in ghee. Then cook in the oven for 3 to 5 minutes after browning on all sides, depending on how you like your meat (rare, medium or well done)

And the gravy?

You can use a gravy of your choice.

Easy and Creamy Hummus!

Dear Reader,

After my return from holidays last week, I became unwell, having my ass handed to me by the flu. This whole week, the only thing I had the energy of cooking, aside from scrambled eggs, has been hummus, mainly because it reminds me of my last meal with my friend before flying back to Switzerland.

This recipe is easy and delicious, and we put the right amount of oil so as not to fatten us, but just enough to make it creamy and satiating. You can have hummus with any type of bread, or alone. It is just delicious, but since I have had some really awful, watery and bland hummuses, I must say that mine is very good. I'm really not blowing my own horn. Try it and see for yourself.

I substituted the traditional lemons with Apple Cider Vinegar because we are trying to keep the acidity of out gut low for optimum health and weight loss as apple cider vinegar actually assists with digestion and alkalizing your digestive tract.

Spinach and Chickpea Stew.

Dear Readers,

This delicious dish can be served with rice, bread, or couscous, as the main dish or as garnish to a steak, or chops. For us weight trying to lose weight, it is perfect alone, as the chickpeas serve as protein, and the spinach is the veggie with the iron, so it is balanced on its own. And, for weight conscious people, do serve this with a piece of rye bread if you need to for that extra moreish taste. I call it a stew because it is not really a curry.

Lemony Puff Pastry Cones

Dear Reader,

August and September are always busy months, filled with birthdays, including mine, my husband's, my mom's and my husband's best friend who is born on the same day as he. So, due to this, last week was filled with sweets. Due to making something special for my husband, I made some pastry cones for his friend's birthday party of 16 people. I tell you what, preparing food for 16 people as very stressful for me, and when I did it, I believed that I could do pretty much anything.

Healthy Chicken Burrito Filling!

Dear Reader,

I generally do not like meat, but on numerous occasion, I will crave ground meat. It's the weirdest thing. I love sausages, and minced meat, and if allowed to, I could eat it for breakfast, lunch and supper. But, alas, since I am on a weigh-loss journey with these recipes, I have to say that keeping within the Metabolic Balance rules, i.e. 1 type of protein per meal, I have had to introduce spices to add depth of flavour that can sometimes be found by mixing proteins.

It will be up to you whether you add cheese on your burrito, whether you you eat it with gauc, and add things like plain yoghurt which some people do. Also, this recipe is designed to fill you up without missing the required amount of veggies and protein in your meal. Also, it is up to you whether you eat this with a tortilla, or like a good healthy person, whether your tortilla is lettuce or just with 10g of rye bread.

Easy, Mediterranean Chickpea Pesto Salad.

Before visiting Italy three weeks ago, I hated olives with all my being. Then, I ate some Italian dishes that served up olives in a fresh way, so I thought it would be a good idea to do a twist on a salad I posted earlier here for a completely different flavour profile. It is a great salad, for summer, but to be honest, you can make it anytime and it will feel like the perfect time for it.

Easy Durban Style Chicken Curry!

Dearest Reader,

Indian curry is my absolute favourite thing to eat. I can eat curry everyday and not get tired of it, which makes me think that I was an Indian in my previous life. What helped is growing up in Durban and Port Shepstone, in South Africa, where I was surrounded by Indian people and friends who shared the foods with me, which helped me be able to make authentic South African Indian Curry. I specify the area because curries differ, but personally, the style that I make, is superior. Ask anyone from Durban. LOL.

Here's how to make it, and the more of the ingredients I list you have, the better it tastes. You don't need to put all the spices I put in mine, but every spice you do not put does in fact make a huge difference in taste. I will also tell you what to substitute to make it less healthy and of course, more delicious. Ha!

Salmon and Mushroom Pasta!

Dear Reader,

Yesterday was the best day of my life! My nutritionist allowed me 2 cheat meals twice a month, and on top of everything else, yesterday was the greatest Game of Thrones episode this season, or ever, so, my husband and I decided to make yesterday a pleasure extravaganza.

We came back from Zürich, he from work, I from my nutritionist, and we had a mission in mind. So, as soon as we got home, we downloaded Game of Thrones (downloading is allowed in Switzerland). As that was downloading, he went to gym and I cooked. As soon as the food was cooked, I showered, put on my favourite scent, Dolce by Dolce and Gabbana, put on my pjs, and by the time I finished everything, he was also showered and ready to eat the best meal of our lives, and watch our favourite show.

The pasta took me 30 minutes to make. Here is how...

Dear Reader,

On Saturday, Switzerland played soccer against some other team and won, which is apparently an anomaly. My husband's friends invited us to watch the match, and asked us to bring salads. I invented this salad quickly, and it turned out to be quite a hit. It is not metabolic balance because it has two proteins in it, but you can remove either the mozzarella or the chickpeas to make it a healthy salad. I didn't because I do not like to impose my lifestyle on people, so I made a delicious salad for them and brought smiles on their faces. I made this salad for about 20 people, but below will be ingredients for two people.

Chicken Wings in Sticky, Red Bell Pepper Sauce

Dear Reader,

When I mentioned to my husband that I was going to make chicken wings, he was so happy, he hugged me. He loves chicken wings, and so do I, but I was stuck on the sticky, sweet sauce because I was not going to add any store bought sauce. Fortunately, inspiration smiled at me and I found a wonderful solution to making the sauce sweet, sticky and beautifully brown. Prunes!

Now, now... Give the recipe a chance before you judge. You won't taste them, for starters. You will just taste their effect, which is a deep, sweetness reminiscent of molasses, giving the sauce depth and deliciousness.

Breakfast or Lunch Idea: Chicken and Avo!

Dear Reader,

D' you have left over chicken from last night that you want to make an experience eating the next day? Well, here is how.

Get your leftover chicken, get some avocados, and some crunchy knäckerbrot and put it together. If you want to add some acidity, drizzle a little Apple Cider Vinegar. And, BOOM! You have a breakfast or lunch of champions.

I used:

70g chicken
90g Avocado
2 Crunchy Breads.

Paprika Butter Chicken Spice Mix!

Dearest Reader,

Since I can't eat ready made spices due to my eating plan with Metabolic Balance, I have to concoct my own spice mixes for chicken, lamb, and seafood. It sounds daunting, but it is as easy as going to the supermarket and getting a few ingredients. Then, you can keep the dry spices for a while in the cupboard by making a huge batch.

This particular recipe is not a big one. It is for about 4 to six chicken breasts but you can multiply the amounts for a larger amount. What makes this recipe "Butter Chicken" is that it gets a buttery and creamy flavour from the ghee that is included in it. You can then later serve this chicken with vegetables of your choice for a balanced meal.

Chickpea, Kidney Bean and Red Bell Peppers in Tomato Sauce

Dear Reader,

There are many exciting ways of making flavoursome legumes. This recipe can be made with just one kind of legume, but personally, I love mixing other legumes with kidney beans because it allows for different textures in the dish, about making it look colourful. Of course, most importantly, red kidney beans have an awesome, deep flavour which helps add another dimension to other legumes.

You can serve this dish with rice, couscous and bread. You can also just enjoy it on its own. It is up to you. It doesn't go really well with pasta though.

Delicious and Easy Mini Crustless Quiches!

Dear Reader,

For this quiche recipe, I did two types, for the healthy and the "I eat anything as long as it is delicious" people.  :) One thing remains though, even the "unhealthy" version is relatively healthy because I opted out of using a pastry crust. This is to be served on a bed of salad leaves as a lunch or light supper. It is made in 30 minutes from start to finish, and so you can make this before work, or after work, during your work lunch, or any time you please. Chicken, Roasted Veggies and Couscous

Dear Reader,

Due to my restrictive diet, I will not have the couscous with this meal, but I shan't make my problems yours. It's an easy way to cook because I just let the oven do the cooking. I had vegetables to get rid of before they got soggy and old, so I used bits that might not traditionally go together. You don't have to use the veggies I used. You can use any veggies you like, as long as you involve carrots, red bell peppers, green onions (or any onion you desire). The rest is up to you.

Breakfast: Oatmeal and Prunes with Milk.

Dearest Reader,

The easiest and quickest, hot breakfast in the world is that of oatmeal. Get yourself organic products to boot and you are sure to feel satisfied and happy all the way to lunch time. Yes, this can and will fill you up for 5 hours!

I do oatmeal (55g) with Sheep's Milk (210ml) and Dried Prunes (45g) for sweetness. You can substitute the prunes with any other fruit you wish, like dates or mangoes, but dates are too sweet.

Bean Curry For A Cold Day!

Dearest Reader,

I love curry! I am obsessed with curry, in fact. Therefore, to celebrate the reintroduction of oil into my diet after a 14 day, no oil, Phase 2 of Metabolic Balance, I thought I should treat myself. I served the curried beans (85g) with wonderful zucchini (120g)  and for dessert I had some mango (180g). The bread (10g) is optional on my plan, but to be quite honest, one doesn't need bread.
